Sardine & Lentils Tomato Stew

This recipe evolved from just lentils and sardines at first, boiled together, which was insanely cheap for how nutritious it is. After a while, I decided to add tomato sauce to improve the taste. It did taste better, but was still quite hard to swallow. I figured the recipe needed some spiciness, so I added the addition of the chilli flakes, which made this meal delicious and a staple in my diet.


Ingredients & Costs

Raw lentils, washed 80 g €0.20
Sardines 1 can / 90 g €1.40
Tomato passata 100 ml €0.30
Olive oil 2 tbsp €0.20
Water 300 ml negligible
Salt ¼ tsp negligible
Smoked paprika ½ tsp negligible
Garlic, diced 2 cloves negligible
Chili flakes 1 tsp negligible

Total cost: €2.10
Servings: 1 large serving

Instructions

  1. Heat the olive oil in a pot over medium heat.
  2. Add the diced garlic, smoked paprika, chili flakes, and salt. Cook until the garlic is golden and fragrant.
  3. Add the washed lentils and 300 ml water.
  4. Bring to a boil, then simmer for about 20 minutes, until the lentils are soft and only a small amount of water remains.
  5. Add the tomato passata and stir.
  6. Cook on low heat for about 6 minutes, until the sauce thickens.
  7. Top with the sardines.
  8. Serve warm and enjoy.
